Apparently, I am not done with ground turkey pasta recipes! How can I not share with you one of my childhood favorite meatball recipes and let you miss it?
The fantastic Turkey Meatballs and Pasta Soup recipe features ground turkey as a star ingredient.

Ingredients
  

For Meatballs

  • 1 pound ground turkey
  • ½ cup fresh breadcrumbs
  • ¼ cup fresh parsley cut up
  • tsp fresh oregano
  • ½ cup Parmesan cheese, shredded finely
  • 1 large egg
  • Salt and ground black pepper, as needed
  • 1 tbsp olive oil

For Soup

  • 1 tbsp olive oil
  • cups yellow onion, cut up
  • cups carrots, peel removed and cut up
  • ¾ cup celery, cut up
  • 4 garlic cloves, finely cut up
  • 14½ oz of chicken broth
  • Salt and ground black pepper, as needed
  • 1 cup dry orzo pasta
  • 6 oz fresh spinach, cut up
  • cup Parmesan cheese, shredded finely

Instructions
 

For Meatballs

  • In a large-sized bowl, add ground turkey and the remaining ingredients except for oil and blend to incorporate thoroughly.
  • Make small, equal-sized balls from the mixture.
  • In a large-sized non-stick wok, sizzle oil over medium-high heat.
  • Cook the meatballs in 2 batches for around 4 minutes, flipping occasionally.
  • Transfer the meatballs onto a plate lined with paper towels.

For Soup

  • In a large-sized soup pan, sizzle the oil over medium-high heat.
  • Cook the onion, carrots, and celery for 6-8 minutes.
  • Add in garlic and cook for around 1 minute.
  • Blend in the broth, salt, and black pepper and cook until boiling.
  • Blend in pasta and meatballs and immediately turn down the heat to medium-low.
  • Cook with a cover for around 8 minutes, stirring occasionally.
  • Blend in the spinach and cook with a cover for around 2 minutes.
  • Enjoy hot with the garnishing of Parmesan cheese.
