- Fresh Lime Juice — ½ teaspoon
- Salt to taste
- Freshly Ground Black Pepper — ¼ teaspoon
(b) For the Marination:
- Water — ⅓ cup
- Fresh Lime Juice — ⅓ cup
- Vegetable Oil — 2 tablespoons
- White Vinegar — 1 tablespoon
- Soy Sauce — 1 tablespoon
- Freshly Ground Black Pepper — ¼ teaspoon
- Chili Powder — ½ teaspoon
- Cayenne Pepper — ½ teaspoon
- Onion Powder — ¼ teaspoon
- Garlic Powder — ¼ teaspoon
- Liquid Smoke — ½ teaspoon
- Salt — 1 teaspoon
- Boneless and Skinless Chicken Breasts — 5 pieces
(c) For the Assembly:
- Bell Peppers — 3
- Large White Onions — 2
- Flour Tortillas — As needed
- Olive Oil — 2 tablespoons
Instructions
Step 1: Mix all your chicken marination ingredients in a mixing bowl. Stir them together well, so there are no clumps. Now, use a knife to make three slits in the chicken breasts. You can also use a fork to pierce the chicken if you want. Now, add your chicken pieces to the marination batter. Cover the bowl with plastic wrap and let it marinate in the fridge overnight or for 7 to 8 hours.
Step 2: Your next step for the next day is to sauté the vegetables. Place your cast iron skillet or non-stick pan on the stovetop at medium-high heat. Add olive oil to the skillet and let it heat up for a while. Add chopped bell peppers and onions to the skillet and sauté until the onions become translucent and the peppers start to soften. While this happens, prepare your chicken.
Step 3: If you have a grill, that’s great; otherwise, you can use a grilling pan for this step. Take your chicken breasts out of the fridge. Put your pan on medium-high heat on the stove. Oil the pan a bit, place the chicken on the pan, cook for 15 minutes, and flip occasionally. If you are doing it on a grill, do the same, but you don’t need to add any extra oil.
Step 4: Now, you will make the Vegetable Finishing Sauce. Take a small bowl and add all your ingredients to make the sauce. Add your sauce to the peppers and onions in the pan and let it all simmer for 2 to 3 minutes.
Step 5: Check if the chicken is cooked, and if it is, take it off and let it sit for a while. Now, toss your tortillas on a pan and warm them up. Slice the chicken into strips after it has cooled down a bit. Arrange everything in a large dish and serve it with delicious toppings like cheddar cheese, lettuce, carrots, sour cream, etc. Let everyone make their own fajitas and enjoy!
