Mango Cashew Shredded Chicken Curry
Ingredients
- 2 cups of pre-cooked and shredded chicken (from rotisserie or leftovers)
- 1 ripe mango, peeled, pitted, and diced
- ½ cup of cashews, toasted and roughly chopped
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 tbsp of freshly grated ginger
- 1 tsp of curry powder
- ½ tsp of ground turmeric
- ½ tsp of ground cumin
- ½ tsp of ground coriander
- ¼ tsp of cinnamon
- ¼ tsp of cayenne pepper (adjust to taste)
- 1 can of coconut milk
- 1 cup of chicken or vegetable broth
- 2 tbsp of cooking oil
- Salt and pepper, as needed
- Fresh cilantro leaves for garnish
- Cooked rice or naan bread for serving
Instructions
- Heat the cooking oil in a large skillet or pot over medium heat. Add the finely chopped onion and cook until it becomes soft and translucent.
- Toss the minced garlic and freshly grated ginger into the skillet. Sauté for about a minute until their aromas are released.
- Mix in the curry powder, ground turmeric, ground cumin, ground coriander, cinnamon, and cayenne pepper. Cook for an additional minute to lightly toast the spices and develop their flavors.
- Pour the coconut milk and chicken or vegetable broth into the skillet, bringing the mixture to a gentle simmer.
- Introduce the shredded chicken into the skillet, stirring it to combine with the curry sauce. Allow the mixture to simmer for around 5-7 minutes, letting the flavors meld.
- Gently fold in the diced mango and chopped cashews. Allow the curry to simmer for another 2-3 minutes until the mango is heated through.
- Taste the curry and season with salt and pepper according to your taste preference.
